How these numbers were worked out

Each figure is the median of the typical spend per person recorded for every restaurant in this guide, taken from published menu prices rather than from receipts or surveys. 239 of 245 restaurants have a price on file. Medians are used instead of averages because a handful of barbecue houses would otherwise pull the figure up. Groups with fewer than two restaurants are left out of the tables. The numbers move whenever the guide is updated, and the date above says when.
