It was really tasty. Everything was fresh and the staff were friendly. It's a place people queue for.

The meat comes to the table already grilled, so nobody has to cook — convenient — and it tasted good.

Nonhyeondon, Nonhyeon — thick pork belly on a cast-iron lid grill, grade-1 Korean pork, football on the TV
Two things an operator notices. First, the lid grill: the banchan cook on the same iron as the meat, so the kimchi and sprouts soak up the pork fat — that is the whole point of the sotttukkeong style, and it only works if the kitchen keeps the lids seasoned. Second, the room: round steel tables on black barrel bases, exposed ducts, Edison bulbs and a football match on the TV. It is built for a weeknight after work, not a date — loud, quick, and easy to walk into without a booking.

Beodeunamujip, Hanam — charcoal-grilled eel and a whole-chicken soup by the Han River, private rooms and parking
Two things an operator notices. First, the banchan were clean — small portions, freshly dressed, no tired leftovers refilled from the day before. Second, the room plan: proper private rooms, a gravel car park in front and a river view at sunset with willows (beodeunamu, the restaurant's name) in the frame. That combination is what a family drive-out restaurant outside Seoul lives on: weekend groups who arrive by car, sit in a room and stay for two courses.

Yongyong Seonsaeng, Nonhyeon — twenty friends, one volcano mala hot pot, ₩530,000 for the table
The dishes built to go with drinks are better than they need to be, and the prices hold low. But what makes the place is the room: step inside and it is like turning into a Hong Kong side street, and the private space turns a big group into a crew with its own hideout. I run this place, so weigh my words accordingly — but a twenty-person night is exactly what a pub like this does best, and it is how I would send a group of visitors here.

Seoul Jjukkumi, near Nonhyeon Station — webfoot octopus and pork belly on a table pan, ₩16,000 a portion
The kitchen is open, so every pan leaves the fire in plain view. From the operator's side, that is the detail worth noting: an open kitchen has nothing to hide from the room, and cooks who are watched keep their timing. The owner was friendly, and in a small room of round steel tables and low stools, the owner's manner is most of the atmosphere.

Honmachi, Nonhyeon — a one-man tuna set, ₩55,000 a head
The tuna was top grade. A tuna bar is won or lost on buying, thawing and ageing — and when the line between lean and belly stays sharp and the colour holds to the last piece, that work is being done every single day. With one person running the room, the judgement comes from one pair of hands, to one standard, every time.

Banpo Galbi, Express Bus Terminal — charcoal galbisal and top blade with doenjang stew, ₩49,800 for the table
The moment you step in, every person on the floor looks up and greets you at once. To someone who runs restaurants, that is not a script — it means somebody is watching the whole room, all the time. A place that watches the room watches the fire and the meat too. Both the beef and the stew were faultless.
